perfect sushi rice

3 cups rice
3 1/3 water
half cup rice vinegar
1/4 sug
1/2t salt


Put rice and water to a boil, then simmer for 15 minutes. NEVER open lid! after 15 minutes, turn off and let stand for 15 minutes, still dont open lid.

In a seperate sauce pan put the vinegar sugar and salt together and put over low heat jut long enough to melt everything together. Pour over rice in a wooden bowl and fan while coating until rice is cool.

meatloaf

Bomb tasty meatloaf! A little bit hippie, as is my style. Only pultries, ground turkey and spicy chicken sausage. mmmmm....

2 lbs meat to 1 lb ground sausage,
onion,
garlic,
basil,
oregano,
tomato sauce,
bread crumbs 1/2 cup,
1/2 tomato cup sauce

Sautee onion and garlic before hand, maybe next time throw in mushrooms. Mix 2lbs ground turkey to 1lb of sausage. Mix in basil, oregano, 1/2 cup tomato sauce, in with meat. Add the onion / garlic. Roll into loaf and cover with tomato sauce.

Next time I'll add in mushrooms to the sautee. Also, I could add some artichoke hearts into the meat mix and have little artichoke goodness chunks in the mix, maybe top off with olives next time as well. Matt also mentioned fennel being a good addition next time.
bake 1 hour 400 degrees

ginger ale

Homemade Ginger Ale
from Imbibe

2 cups unpeeled, washed, fresh ginger, roughly chopped
2 cups sugar
6 cups water
8 cups club soda or sparkling water, chilled

Process ginger chunks in forrd processor or blender until finely chopped. Place in a large stock pot.

Add sugar and water and stir. Bring to a boil and then reduce to a simmer of medium-low heat and cook for about an hour until a rich syrup is created.

Strain the syrup twice through cheese cloth or sieve into a large jar or pitcher. Set aside to cool.

Fill a glass with ice. Add 1/3 cup of ginger syrup and top it off with club soda or sparkling water. Add a squeeze of lime if you’d like. So good!

shrimp scampi

beer
worstihire sauce
butter
garlic
olive oil
cajun spice (paprika, chile power, granulate garlic, cayan pepper, black pepper, oregano.
2tbls paprika
tsp granulated garlic
onion powder
1/2tea black pepper
1/2 tsp salt
tsp oregano
1/2 tsp cayan

olive oil with garlic throw shrimp in on top. tbls off cajun spice, 1/2 beer, 3 oz worstishire sauce
remove shrimp
1/4 stick of butter in and put shrimp in with butter and let that finish
